Wash wheat and add 3 quarts water. Bring to a boil then set aside covered to soak over-night. Next day cook on low fire 1 1/2 hours. While wheat is simmering, combine the apricots, raisins, pistachios and pine nuts in a small saucepan with water. Bring to a gentle simmer and allow to cook for about 15 minutes. Thoroughly drain and add all to wheat (after it is completely cooled) with the sugar. Cook for about 30 minutes. Take off the fire, add the rose water and pour into a deep dish.
Garnish it while still warm. Serve cold
