  1. In a saucepan sauté the onion until its transparent. Add the potato and squash. Then add the beans and diced tomato. Continue stirring. Add the bulgur, water, tomato paste and salt. Cover and cook on low heat until water is absorbed and bulgur is soft. Add more water if needed. Let it rest, then serve it with yogurt, fresh onion or salad.
