The Madagh animal is usually lamb. And the meat is used to prepare either lamb stew or Herissa.

Instructions
  1. Melt the butter add on it the onions and cook until translucent, stirring often. Add meat and continue to cook, until meat turns brown. Stir in tomato paste, all spice or cumin, a pinch of salt and enough stock to cover the meat. cover the pan and cook over low heat until meat is very tender and liquid has thickened to a sauce takes about 2 hours.
