  1. Peel off thin strips of the skin on 4 sides of the eggplants to have the striped effect, cut them to 2.5 cm pieces and set aside.
  2. In a large mixing bowl, mix all the meat patties' ingredients thoroughly and form 2.5 cm patties. In a greased tray arrange 1 patty one eggplant simultaneously. Drizzle the top with a few tablespoons of extra virgin olive oil. Cover with foil and bake in a 180°C preheated oven for about 40 minutes, remove the foil, increase the oven temperature to 200°C and bake for another 10 minutes until top is slightly browned. Serve with rice Pilaf, grilled hot pepper and grilled tomato.
2nd way
  1. After cutting the eggplant to pieces and forming the meat patties put them on skewers one at a time. That is an eggplant then a meat patty then again an eggplant... After having them all ready put them on the grill and cook until almost done. Meanwhile grill also 6 small onions, 4 tomatoes and 4 peppers.
  2. Once everything is grilled. Preheat the oven. Arrange the grilled eggplant and patties in a greased tray one at a time. Peel off the grilled vegetables, cut them to desired sizes and put them on the eggplant and beef patties cover the tray with aluminum foil and cook in the oven on 180°C for 15 minutes.
