In a large mixing bowl, mix all the meat patties' ingredients thoroughly and form 2.5 cm patties. In a greased tray arrange 1 patty one eggplant simultaneously. Drizzle the top with a few tablespoons of extra virgin olive oil. Cover with foil and bake in a 180°C preheated oven for about 40 minutes, remove the foil, increase the oven temperature to 200°C and bake for another 10 minutes until top is slightly browned. Serve with rice Pilaf, grilled hot pepper and grilled tomato.
