Saute the chopped onions in the oil until they turn translucent. Add the potatoes and zucchini stir well and leave it on medium heat for about 5 minutes. Then add the diced tomato, pepper paste, tomato paste, salt, Aleppo pepper and enough water to cover the content and cook for about 30 minutes on medium heat. Before turning off the heat add the minced garlic and the dried mint and stir well and let it simmer for couple of minutes. Can be served with rice pilaf.
